Hong Kong’s most enigmatic mixologist is back, and he’s brought his prescriptions with him. This July, Dr. Robben Fern unveils The Doctor’s Residence, a bold new bar concept tucked inside the Pottinger Hotel. Following the cult success of his original Gin Parlour at Landmark, this latest venture invites guests into the Doctor’s private residence, a retro-chic sanctuary where cocktails are cures, and curiosity is the only requirement.
Led by returning Bar Manager Babit Burathoki, the new experience blends eccentric mixology with emotional storytelling. Each drink is presented as a satirical prescription, complete with faux diagnoses, tasting notes, and side effects. Expect surreal flavour combinations that blur the line between science and sorcery — from jellyfish martinis and mushroom foams to pickled watermelon and squid-infused gin.
The drinks aren’t the only thing getting experimental. With over 400 gins from around the world, the Doctor’s collection is unmatched, offering bespoke G&Ts with custom garnishes, edible flower ice, and rare spirits like Germany’s Ortiz IV Gin and Ireland’s smoky Ornabrak.
To complement the cocktails, the bar menu delivers umami-rich bites with playful names and bold flavours: think spiced edamame dips, curry-spiked fish burgers, and double-smashed brioche buns.
Designed like a vintage fever dream, the space features velvet seating, lava lamps, and a fern-filled terrace perfect for sunset sipping and unfiltered conversation. With room for up to 120 guests and a built-in DJ booth, The Doctor’s Residence is more than a speakeasy, it’s an experience.
Now in soft opening, The Doctor’s Residence officially opens its doors on July 1. Appointments encouraged. Side effects may include euphoria, nostalgia, and a sudden love for gin.
