Bridges Street is officially having a moment. Following the arrival of Jean-Pierre last year and standout neighbours like Ask for Alonso, Bar Leone, and Taqueria Super Macho, the buzz has only grown with Salon des Refusés opening just last month. Now, Twist Pasta Bar has joined the scene, bringing an irresistible new energy to this charming, pedestrian-friendly neighbourhood. With its warm vibe and focus on community, Twist fits right in alongside its sister venues Honky Tonks Tavern, Terracotta Lamma, Mendel’s, and Bourke’s.
At Twist, pasta is more than just a meal, it’s a creative playground. As Head Chef Ben Sears puts it, “I want guests to find our food fun, comforting, and, as cliché as it sounds, to spark joy and curiosity.” Take, for example, the Bone Marrow Macaroni, a reimagining of Hong Kong’s iconic curry brisket noodles, or the Squid Ink Spaghetti with prawn, orange, zucchini, and dried shrimp roe from Yau Kee. Desserts are equally inventive, like the Crispy Egg Roll Cannoli—a twist on traditional Cantonese egg rolls stuffed with ricotta and pistachio—or the White Chocolate and Soy Milk Panna Cotta, inspired by the beloved tofu pudding.
Pasta, of course, takes centre stage, with every dish handmade in-house. Expect a variety of doughs, from Northern Italian egg pasta to squid ink and whole wheat bigoli made with duck eggs. Classics like the Baked Rigatoni with ’nduja and spicy vodka sauce or the Stuffed Pumpkin Pappardelle with crispy sage are hearty, comforting, and impossible to resist.
Twist’s drinks program, led by Edgar Santillan and Adam Schmidt, takes a food-inspired approach to cocktails. Truffle, saffron, Parmesan, and fresh herbs from the kitchen find their way into the drinks, creating flavour-forward sips that complement the menu. Highlights include the Caprese Martini with Parmesan-infused vodka, tomato shrub, and basil oil, and the Truffle Sour, a smooth blend of truffle gin, sherry, and lemon. For dessert, the Pink Squirrel cocktail with crème de cacao and amaretto is a must-try.
Take a seat at the bar or snag one of the cozy tables — Twist’s intimate space is perfect for a casual date night or catching up with friends over great food and drinks. With its warm, inviting atmosphere and playful design, it feels just like home, only with better pasta.
