Penicillin is the latest creative innovation of bar legends Agung Prabowo and Roman Ghale, who stand behind the multiply award-winning bar The Old Man Hong Kong. The bar is Hong Kong’s first bar with a closed-loop production model that introduces the first minimal-waste cocktail list to the city.
The food and drink ingredients are sourced either locally or up-cycled, filling Penicillin’s bar menu with authentic flavors of Hong Kong that are secure and innovative. Prabowo, Ghale, and their dedicated team are changing the waste-heavy food and beverage industry by recycling, upcycling, self-brewing, fermenting, growing, and reusing ingredients of which are sourced locally within Hong Kong to reduce carbon emissions.
Inspired by the farm-to-bar movement and one of the greatest breakthroughs in medicine, Penicillin is highly conceptual. Their bar is a place of scientific research and experimentation to achieve a breakthrough in reducing the carbon footprint and implementing innovative sustainability and minimal waste practices, and serving truly state of the art cocktails. The conceptual architectural and interior design by Collective Studio Limited lead the guests through this story step by step, beginning with the Penicillin Lab at the entrance that exposes the behind-the-scenes cocktail production process, passing through to the dimly-lit main space of the bar with soothing earthy materials, and leaving them there to explore further themselves!

Agung Prabowo and Roman Ghale are not done trail-blazing. Penicillin's sister bar Dead& (pronounced "Dead End"), a modern take on the Dive Bar, is set to open at the dead end of Woo On Lane in Lan Kwai Fong this November 2020.
