Led by François Cavelier, the terroir-inspired cocktail programme explores the origins of spirits, featuring creative drinks like “The 3 a.m. Whisky” and “Durian’s Consent.” Complementing this is Chef Lisandro Illa’s fermentation-forward, plant-based cuisine, with standout dishes like nut-based cheeses and fruit charcuterie that elevate vegetarian dining to new heights.
Designed by Studio Paolo Ferrari, Peridot’s lime-green, light-filled interior is a surreal masterpiece featuring over 20,000 handcrafted lights that create its iconic glow.
