He is known for using only the highest-quality, hand-picked ingredients, namely the organic flour from the Girardeau Family’s Suire Mill in Boussay, France; Pepe Saya small-batch creamery butter from Caringbah, Australia; and Guérande sea salt, among other artisanal ingredients.
