
After capturing the hearts of food lovers around the world, Chef André Chiang is making a triumphant return to Singapore—this time with an exclusive new restaurant at the iconic Raffles Hotel Singapore, slated to open in late 2025. Housed in the hotel’s elegant main building, the new dining concept promises to reflect André’s signature culinary philosophy, creativity, and deep personal connection to the Lion City.
“Singapore and Raffles Hotel have always been special to me,” shares the Taiwan-born chef. “I call Singapore the home of ‘grown-up André,’ and I want to create a restaurant that feels intimate, local, and inspired by the city and the iconic venue it’s in.” Known for pushing culinary boundaries, Chef André previously helmed Restaurant ANDRÉ—ranked among Asia’s best—and recently launched Bon Broth, a refined hotpot eatery at Raffles City.
In addition to the exciting restaurant reveal, Raffles Hotel Singapore also introduced Chef André as its fourth Writer-in-Residence, a prestigious honour previously held by renowned authors and creatives. During his time in residence, Chef André penned “Fragments of Time”, a beautifully curated 200-page book that blends his personal reflections, life stories, and inventive recipes rooted in Singapore’s cultural and culinary heritage.
The book’s standout? A playful take on curry and raita, reimagined as a light, refreshing salad—perfect for a sunny afternoon. “Try adding a spoonful of curry sorbet to your gin and tonic,” he teases. “You’ll discover a flavour like never before.”
