Behind the stove is renowned Canadian chef Robin Filteau-Boucher, who previously worked in a two-Michelin star restaurant in Paris, and who brings classics with a twist to Gypsy Bali. There’s Avo on Toast with a twist – it’s served with nuts, candied orange and cumin mayo. His Milles Crepes comprise pancakes with homemade caramel, fresh fruits and cashew butter. Then there’s tuna tataki and octopus salad, as well as roasted chicken and a delectable sea platter to share – he visits the fish market every morning. Pair with ice cold smoothies, slushy juices and milkshakes, or go all out and enjoy a cocktail or two from the extensive menu of fruity and refreshing options.
