Singapore’s grand dame is about to steal the spotlight again. Opening 31 March 2026, 1887 by André is the newest signature restaurant at Raffles Singapore, led by world-renowned chef André Chiang — and it’s already shaping up to be one of the most talked-about dining launches of the year.
Housed in the historic formal dining room of the Raffles Singapore main building, the restaurant has been reimagined by acclaimed designer Bill Bensley, marrying old-world elegance with contemporary flair. From soaring colonial details to original Raffles silverware brought back into service, every element is designed to immerse diners in the property’s storied past.
Named after the year Raffles Singapore first opened, 1887 by André takes guests on a culinary journey through time — tracing the evolution of the property and Singapore itself. Chef Chiang draws inspiration from archival menus, Victorian-era dining rituals and long-forgotten flavours, reinterpreting them through his signature French culinary lens while weaving in the multicultural influences that define the city today.

Diners can choose between à la carte options or a thoughtfully curated set menu, but whichever path you take, the experience is unified by storytelling. Each dish reflects a moment in history, forging a seamless connection between past and present on the plate.
This opening also marks a meaningful homecoming for André Chiang. After decades of global acclaim, his return to Singapore is deeply personal — shaped by memory, mentorship and legacy. His time as Raffles’ Writer-in-Residence and the creation of his book Fragments of Time played a key role in shaping the restaurant’s narrative and vision.
With reservations now open and excitement building fast, 1887 by André is poised to become one of Singapore’s most coveted tables in 2026 — a must-visit for food lovers who appreciate history, artistry and impeccable technique.
